"Biodynamically grown and fermented with indigenous (wild) yeast, this big, ripe yet refined Chardonnay shows complex aromas of butterstoch, bread crust, gentle smoke and spice atop peachy fruit. It's full bodied a real sense of textual poise - almost perfect acid tension in a wine this size. Gently toasty/spice flavours hit excellent length, with a touch of minerality on the finish. Very stylish and interesting chardonnay."

"The Wild Ferment 2017 is the first to not be sourced from estate grapes and is instead an amalgamation of growers’ chardonnay, all organic. What the “wild” brings is a foil to the wood in a way that certainly the Saunders does not effect. Here the complexities are extended, magnified and variegated. More savour, herbs, tisane and a cured porcine gastronomy. Like top notch lardo or a spread made for and with the smell of yeasty, warm bread. You now know who you are to get withy this special chardonnay. Drink 2019-2023."
