2018 Bubbly Pet Nat/750ml
These grapes were harvested on the same day using sparkling parameters, 17.5-18 Brix, with bright acidity, whole cluster pressed and co-fermented to make this white wine. As with our earlier Pet Nat’s, the ferment started wild in tank and finished in bottle, and no additives were used. Its bone dry, has completed malolactic, and bottled with lees, so is soft on the palette and finishes very refreshing due to lower alcohol at 10%.
John Szabo - Wine Align
"Made from pinot noir and chardonnay grown in the Saunders vineyard on the Beamsville Bench, this has a light copper colour and open, enveloping aromatics featuring ripe apple, citrus-grapefruit peel and pith, blood orange, and more. On the palate it comes across as essentially dry but not bone dry, with gentle texture, fresh but creamy, and good length. Complexity and length are ultimately modest, but this is enjoyable bubbly in a lightly oxidative style, fully ready to drink."
Michael Godel - Wine Align
"Bottled on its lees is Southbrook’s thing, packing as much texture and complexity into an approachable bubble as they can. Brings an affinity with Ancestrale-method sparkling wines in that you get this very natural sensation with oxidative feelings and fuzzy fruit of skin-contact extract. Begins with energy, flatlines a bit and then just fills the mouth with mousse and citrus."
