
2017 Saunders Vineyard Chardonnay/750ml
Whole clusters were gently pressure using our “Long, slow” press cycle and slightly settled juice was transferred to 300 L used French oak for wild yeast and malolactic fermentation. Five selected barrels were blended after 10 months to make this single vineyard wine. One barrel was new French oak - 25% new wood

There can be little doubt what Ann Sperling thinks about the fruit from Saunders Vineyard if only by the quality and quantity of barrel it sees. Quite nutty and even smoky there’s a white caramel note at this stage and though picked relatively late for Niagara chardonnay it’s quite warm from the heat of ’17 September. Rich and unctuous to be sure. Drink 2019-2021. Tasted November 2019.
