2020 Hopped Cider
Hand-harvested apples were pressed at the orchard and transported immediately to Southbrook without pasteurization nor preservatives. The juice was allowed to settle, then blended and allowed to undergo wild fermentation with wild hops from Flavia Redelmeier’s garden. After a long, cool fermentation the cider was bottled with sufficient residual sugar to create effervescence. Fermentation was finished in the bottle, capturing the carbonation of primary fermentation, and leaving a residue of lees. No additions of any kind – sulfites, sweetener, acids nor tannins.
A floral, earthy nose with citrus and apple notes. Palate is dry, with light tannins and a mild suggestion of hop bitterness that quenches and refreshes.
