IN THE GLASS:
Bright straw with green glints and the haze characteristic of Pet Net. Candied lemon peel, golden delicious apple and fermentive aromas. Crisp on attack, with volume and texture developing from the mousse. Flavours of lemon and golden apple replay, along with fresh bread. A pleasant bitterness, tangy acid and earthy yeast notes make for a long refreshing finish. This moderately effervescent wine is refreshing and begs to be enjoyed among friends whether out on a sunny patio, or dreaming of the warm weather to come. Ideal with oysters, bloomy rind cheeses, prosciutto and salty snacks of all kinds.

IN THE WINERY:
Made from 100% estate grown biodynamic and organic Chardonnay grapes, a natural fermentation began in tank and then finished in the bottle. This style is known as Ancestral in France, or “Col Fondo” in Prosecco, or Pet Nat in the natural wine circles. The result is that the trapped CO2 provides bubbles, and the post-fermentation lees remain in the bottle to add complexity. Naturally fermented and made with no sulphites or other additives. Bottled with its lees.
