IN THE GLASS:
Medium bright red. The ripe fruit aromas of cherry, red and black currant are grounded by fresh earth and rounded out by some toasty oak. Medium plus body, with ample silky tannins and fruit filling the mid-palate. The ripe fruit of a warm vintage and subtle oak give the wine a lush, hedonistic quality. The acidity is moderate, with the silky tannins and plump fruit carrying through to a long finish.
This wine will pair well with duck confit, roast or grilled lamb, vegetarian stews featuring beans and red pepper, or a simple roast chicken.

IN THE WINERY:
Hand harvested from certified organic vineyards across Niagara. Grapes were cluster sorted and gently destemmed with 50% crushing before indigenous fermentation and malolactic conversion in oak vat. Following a total maceration time of 4 weeks, the grapes were gently pressed and the wine settled before barrel aging for eight months. Barrels were then carefully selected, blended and filtered before bottling. No fining.
