2016 EGSL Wild Ferment Chardonnay/750ml
Like all our Estate wines, this Chardonnay is transformed from grape juice to wine via the naturally occurring yeasts in our vineyard and winery. Wild fermentations are slow and create wines of complexity and a distinct taste of place. In 2016, winemaker Ann Sperling opted to blend in some Semillon from our farm for freshness and acidity. While still displaying some fruity “baby fat”, this is a big wine with great aging potential, which will develop more savoury and nutty character over the next 5 to 10 years.
