Very pale straw, with small, gentlly fizzy bubbles and a slight haze. Vibrant citrus and peach fruit on a bed of yeasty / fresh bread aromas. Crisp with refreshing acidity, a replay of bright fruit, volume added by the bubbles, and texture, pleasing bitterness and length from the lees.
Made from 100% estate grown biodynamic and organic Vidal Grapes, a natural fermentation began in tank and then finished in the bottle. This style is known as Ancestral in France, or “Col Fondo” in Prosecco, or Pet Nat in the natural wine circles. The result is that the trapped CO2 provides bubbles, and the post-fermentation lees remain in the bottle to add complexity. This moderately effervescent wine is refreshing and begs to be enjoyed among friends whether out on a sunny patio, or dreaming of the warm weather to come. Like our Orange Wine, nothing was added and nothing taken away making this another true natural wine with no sulphites or other additives.
