Canadian Blueberry Food Recipes
Wine Lovers' Notes:
In the Glass
Purely and simply blueberry with a hint of herbs and earth. Full bodied, sweet, with a slightly tart long finish.
In Print
Purple colour. Sweet, freshly squished, ripe blueberries on the nose and palate. Lovely, sweet, lingering, tangy, creamy, fresh, cassis-blueberry jam flavours. –Michael Vaughan, Vintage Assessments
In your Life
This wine is best served chilled. This is the softest of our fruit wines and is a gentle companion to any dessert. Ideal with a rich slice of cheesecake, a seasonal fruit salad or a mixed-berry shortcake. Drizzle on top of custard cream or use simply over ice cream.

In the Cellar
In order to preserve the fresh fruit characteristics in the finished wine, the fermentation is stopped with the addition of alcohol, leaving some residual sugar. The fruit macerates for three to four weeks in stainless steel tanks, after which it is pressed and sweetened, prior to bottling.
