In the Glass

Purely and simply blackberry with a hint of herbs and earth. Full bodied, sweet, with a slightly tart long finish.

Deep purple colour. Sweet, freshly squished, ripe blackberries on the nose and palate. Lovely, sweet, lingering, tangy, creamy, fresh, cassis-blackberry jam flavours.

In your Life

A great wine that compliments any dark chocolate dessert. A dichotomy of both sweet and tart flavours true to the fruit itself. Works very well as a vinaigrette or a gastique when used on fresh summer salads.

Winemaker's Notes:

In the Vineyard

Varietal: 100% Blackberry - Wild and cultivated fruit
  Ontario

In the Winery

Alcohol: 14.5%
Titratable Acidity: 8 g/l
Residual Sugar: 180 g/l
Closure: Synthetic cork
Release Date: Available now

In the Cellar

In order to preserve the fresh fruit characteristics in the finished wine, the fermentation is stopped with the addition of alcohol, leaving some residual sugar.  The fruit macerates for three to four weeks in stainless steel tanks, after which it is pressed and sweetened, prior to bottling.
