Southbrook Vineyards is making history with the launch of Canada's first biodynamic wine!
The release date for Cabernet Rosé is April 22nd, 2009 - Earth Day®.

The Earth Day® Simultaneous Restaurant Release

At current count, 28 restaurants from Ottawa, Toronto, Prince Edward County, western Ontario, Muskoka and Niagara are releasing this wine on the same day! Chefs and sommeliers in these restaurants are featuring the Cabernet Rosé on their wine-by-the-glass list or with a specially created dish or food match.

Toronto chef Jamie Kennedy, who is at the culinary forefront supporting sustainable agriculture, plans to pair Southbrook’s Cabernet Rosé with Marinated Lake Trout Tartine with Wild Leek Sweet and Sour Mignonette at his Jamie Kennedy Wine Bar. “Congratulations are in order to everyone at Southbrook for ushering in this new era, this new layer of excellence in agriculture,” says Kennedy. “Southbrook’s commitment to biodynamic practices reflects a deep respect for the natural balances that present themselves on farms. The delicious purity of the wine speaks volumes.”

Innovative Ottawa restaurateur Stephen Beckta is thrilled to "Play" a role in this historic launch. "We have always been huge fans of both Southbrook Vineyards and biodynamic wines in general. We can't wait to show off to our guests what Ann (Sperling) and her team have done with Canada's first certified biodynamic wine that we have already fallen in love with." At Play food & wine, Chef Michael Moffatt has specially created a new "small plates" dish to highlight the Cabernet Rose's freshness: Hand-rolled Gnocchi with White Asparagus, Oyster Mushrooms and Sorrel Vinaigrette.

“On Earth Day we celebrate all things green,” says James Treadwell, co-owner and sommelier at Treadwell Farm to Table Cuisine in Port Dalhousie. “It’s a fitting launch day for this wine, because biodynamic winemaking is by far the best thing for the environment.” Chef and co-owner Steven Treadwell plans to pair his Niagara Gazpacho with this lustrous pink wine.

On April 22nd, Southbrook people will be hanging out in some great wine bars in Toronto, Ottawa and St. Catharines. Please drop by for a taste and a casual chat.

A Little Bit About Biodynamics

Southbrook’s vineyard was certified organic by Pro-Cert Canada in the fall of 2008 and then we became the first winery in Canada to be certified biodynamic by Demeter Canada. This holistic farming approach recognizes the vineyard as a self-sustaining ecosystem. It goes beyond the standards for organic farming by recognizing the interrelationship between the soil, plants and animals, and the energy forces affecting the farm, such as lunar and planetary cycles. Biodynamics says the farm should be self-sustaining – an entire living system. Our Winemaker Ann Sperling feels that the resulting practices are about quality in the bottle—and quality of life.

Ann has written a very interesting article on the comparison in approaches to vineyard management by season, demonstrating the difference between biodynamic, organic and conventional philosophies. The article is generously made available to us courtesy of FoodService News.

The Cabernet Rosé is the first wine to be released from our estate-grown grapes since certification and marks a milestone for Marilyn and Bill Redelmeier, owners of the winery. “Biodynamics goes leaps and bounds beyond organic and more fully expresses the vineyard’s character in our wines,” says owner Bill Redelmeier. “But you don’t need to know anything about biodynamics to know that this is simply a delicious wine."

Reviews

The quality of the Cabernet Rosé 2008 has impressed top wine critics.

“A lovely rosé to kick off the spring season,” said wine writer David Lawrason. “It’s medium weight, silky, off dry yet lively with a juicy, tart finish. Very zesty.” Wine expert Tony Aspler agreed, calling the Rosé a “terrific summer wine.”

A Perfect Match

What this wine really matches with is good friends and good times. As The Cabernet Rosé front label suggests – this is the wine for relaxation, for conversation and for enjoyment. Pair it with sun-drenched flavours such as olives, tomatoes and peppers. Definitely a match for salmon, ham or other cured meats. Suitable for vegans & vegetarians.
