"Vidal is not regularly used for table wines, but this organic edition is quite fetching with fresh pear-pineapple, flower and some cut hay/grass character. In the Cellar
Sourced from two vineyards, Southbrook Estate (certified organic and biodynamic) 76.1% and Palmira Vineyard (certified organic) 23.9%.
Stainless steel fermentation with a mixture of indigenous and cultured yeast lots. Both Southbrook Estate and Palmira Vineyards lots were cool fermented separately in stainless steel prior to blending, gentle egg white fining, filtration and bottling. Bottled in 395g lightweight glass sourced from Ontario to reduce carbon footprint. (80% of the raw material for the glass comes from Ontario “Bag-it-Back” program). Closed with Stelvin to preserve freshness.
