In the Glass

The beauty of this wine lies in its seemingly contradictory qualities - substance & weight and lightness & finesse. Your nose is greeted by fruit - but is it only fruit? No, there is oak and vanilla there too. It is subtle and complex. Then mouth filling and flavourful, then just before it's gone, the minerality kicks in and it's all freshness.

90 - "I love this style of Chardonnay: hazelnuts, baked apple crumble and Asian pear - terrific! It's full-bodied and generous with an enticing intensity of fruit, but balanced and elegant. The bonus is that this winery grows its grapes organically. Serve with Ontario's Balderson Vintners Cheddar, aged for 20 months and absolutely suited to white wines. Cheddar will bring out the fruit notes in this Chardonnay".

This Whimsy is a 2 barrel lot - 2 barrels made by Damy cooperage from the Vosges forest and wood that was seasoned for 36 months. The barrels are slightly larger than a barrique, at 265L.
