In the Glass

Ripe cherry, raspberry and blackcurrant with remarkably little herbal quality. Smooth on the front-end with solid tannin and good length. A touch of black pepper and tobacco on the finish. Good acidity will assist cellaring.

"This is a nicely elegant, dense wine for a Cab Franc from the 2008 vintage - one of the better Francs from the vintage to date. It has a sense of cohesion and style, with honest Cab Franc raspberry/currant fruit and red pepper flavours generously framed by oak tobacco and some chocolate. It drinks well, nicely balanced, dry with some oak on the finish. Very good to excellent length. Best now to 2014".

Harvested: October 21 and 24, 2008
Vineyard: Estate-grown (Four Mile Creek sub-appellation)
Brix at harvest: 21.7° and 22.3°

In the Cellar

Hand-harvested from our estate vineyard, leaf plucked by our resident flock of Newfoundland and Rambouillet sheep.

Cluster sorting, destemming and 50% crushing of grapes to stainless steel as well as oak vats. Indigenous fermentation over four weeks. Cap management via delestage three times daily with gentle manual pigage during the finish of maceration. Gently pressed and settled prior to barrel aging in both French and American oak. Wine was unfined. Certified organic by Pro-Cert and certified biodynamic by Demeter Canada.
