In the Glass
Nose shows vibrancy and depth of cassis, blackberry, juniper, savoury herbs, cedar and leather with a juicy and full palate with replays of the same elements as on the nose. Finish is earthy, with fresh acidity and tannins that bode well for cellaring.

"Ann Sperling, who has dubbed this wine The Winemakers' Palette, has 'painted' a lovely wine from the superb 2007 vintage in Niagara. Aromas of raspberry, boysenberry, tilled earth and woodsmoke are front and centre. The palate is dry and fruity, yet fine tannins come through for balance. This Cab Sauv is beautifully constructed. In the Cellar
Individual vineyard blocks of grapes from our estate vineyards were hand-picked and cluster sorted into oak and stainless steel open top fermenters for fermentation. Upon achieving the right fruit and tannin balance, the grapes were pressed to extract only the soft tannins. The wine matured in French and American barrels for 15 months before barrel selection, blending, and a gentle egg white fining prior to unfiltered bottling.
